Home-cured BACON!!!

Bacon...nectar of the gods....

I love bacon..it's crispy, crunchy, salty and just GOOD. Oh, and YES it is Whole30 compliant!

With a caveat: it has to be sugar free, nitrite free, etc. And while, as I have discussed, there IS Paleo-friendly bacon out there, it is significantly more expensive than regular bacon. Even ordering it online from places like U.S. Wellness Meats which truly gives you control over how the pork is fed and taken care of and responsibly harvested....it is STILL not budget friendly for those of us ON a budget. 


Pork Belly

Enter the humble pork belly from whence all bacon cometh! At our local Asian supermarket a pound of pork belly is about $2.99. Add your own spices, leave it in the fridge for about a week and voila`! 


Ready for curing!

You have your very own bacon that you know EXACTLY what you put in it! Not only is it free of all the stuff you don't want, but you can customize your seasonings to whatever your tastes are. Most importantly, it is SO MUCH less expensive than buying even just REGULAR bacon, let alone Paleo/Whole30 approved bacon! And if you aren't doing a Whole30 and want to add a little honey, or some brown sugar or maple syrup feel free!
